Its always difficult to cook for a single person

Reading this I was inspired and was certain that on my itty bitty shelves in the kitchen, somewhere there was elbow pasta (better known to me as macroni?). I was determined to buy some spinach and voila here was my very own freshly made-to-order pasta. But reaching home as I do, much much later than sunset I had to make do vegetables that were at home (aint that many will tell ya).

Pasta it was with a dash of olive oil with lightly browned garlic, slightly softened onions, two leftover slightly squishy tomatoes and shredded cheese (nothing exotic - good old fashioned cheddar). It tasted just right - lightly seasoned with enough of bite and great aromas! Cant wait to replicate and spice it up a bit. A great dish btw for those one dish meal especially for one single person.

Hey you know what, I read that just after having elbow pasta for dinner with spinach! Creepy coincidence! But I had added chicken kheema too. It was so yummm!!!
