Leftovers and adventures.

Also for those who like eggs and do not mind brinjals... I tried an 'amlet' (omelette for non maharashtrians) with sauteed bringjal slices and the result was not too bad if I may say so myself.

Eggs and brinjal are a deadly combo! I remember my dad making this dish. Roast the brinjal, then fry it with eggs. It's this delicious mashy mixture! I often have it even now but of course it doesn't taste as divine as his.
